Planetary Mixer must meet all the below. Bowl and Capacity: Must have a minimum of 40-quart capacity in mixing bowl with bowl made of stainless steel. Mixing bowl must be able swing out from mixer without being removed from mixer assembly to allow easy access to contents Mixer Settings: Must include the following agitators: a B beater, a D wire whip, and a ED dough hook. Agitator Quick Release: must have a quick release system to easily change agitators. Speeds: System must have 3-speed function that can be switched during operation Timer/Auto Shutdown: System must have minimum 20-minute timer that can automatically shut down mixer after a selected time.
