Harry S. Truman Memorial Veteran s Hospital Food Service Operations 589A4 40-Gallon Gas Kettle Introduction: Food Service Operations is requesting procurement of a 40-gallon gas kettle. This procurement will allow for activation of kitchen remodel. The 40-gallon gas kettle is well suited for cooking large amounts of foods that require frequent stirring and/or long simmering periods. Use: A gas kettle is a food cooker that uses conduction heat to heat up the kettle s metal structure which then cooks the contents within the kettle. Gas kettles use heating elements to generate heat between the two layers of the kettle. Kettles are well suited for cooking large batches of food such as grains, sauces, stocks, soups, meats, and vegetables that need longer simmering times. Requirement and Specifications: 40-Gallon Gas Kettle Stationary gas kettle with a 40-gallon capacity, 2/3 steam jacket, 316 stainless steel exterior, 304 stainless steel exterior finish, self-contained, floor mounted control console supports, electronic ignition, faucet mounting bracket, flanged feet, 2 tangent draw-off with strainer, spring-assisted cover, 50 psi rating, and 140,000 BTU. Kettle requires; natural gas, 120v/60/1-ph, 10.0 amps, electronic spark ignition, cord & plug for controls (standard), 2 tangent draw-off (standard).
