The Concessionaire shall provide all personnel, transportation, supervision, and all food and related supplies required to operate an American style restaurant. The Concessionaire will follow the provided menu, recipes, product specifications, and plating standards to include, appetizers, main dishes, and desserts. Services required include all the basic functions of running a restaurant: subsistence ordering, receiving, storing, food preparation, service for both dine-in and take away, and cleanup. The Concessionaire has the option to modify 10% of the menu after the initial three months of operation. The Concessionaire will develop recipes, product specifications and plating standards for Non-Appropriated Fund Instrumentality (NAFI) representatives to review and agree on.
