TYPE OF SERVICE REQUIRED. The Concessionaire shall provide the menu, all personnel, transportation, supervision and all food and related supplies required to operate a Quick Serve Asian Inspired Cuisine specialty restaurant. The Concessionaire will follow the agreed upon menu (to include vegetarian options), recipes and product specifications, and plating standards to include appetizers and main dishes. Services required include all of the basic functions of running a restaurant: subsistence ordering, receiving, storing, food preparation service for both dine-in and take away and clean-up. The Concessionaire has the option to modify 10% of the menu after the initial three months of operation. The Concessionaire will develop the menu, recipes and product specification standards for Non-Appropriated Fund Instrumentality (NAFI) representatives to review and agree on. Food offerings will not directly compete with the core FSS offerings.
